4 ingredient clean eating chocolate

I LOVE LOVE LOVE LOVEEEEEE desserts.

I live for desserts. (Just kidding, I don’t–I live for Jesus, but he gave me desserts and I am pretty darn thankful.)

If it wouldn’t kill me, I would eat dessert after every meal including snacks for the rest of my life. But eating sugar-filled donuts, corn syrupy pecan pies, and even ostensibly healthy whole wheat chocolate chip cookies probably would kill me. Not to mention whole wheat chocolate chip cookies are nasty. Chocolate chip cookies are just one of those things people need to not mess with; you can’t make them both healthy and delicious.

Oh, but with chocolate, you can. 

Presenting my 4 ingredient coconut oil chocolate. This one is legitimately healthy, people. No refined sugars, no artificial sweeteners, no unnatural ingredients. I would go so far as to say this chocolate is not only not bad for you, it is actually good for you!

I also forgot to mention the most important part—this stuff is addictive simply because it’s absolutely DELICIOUS.

It’s simple too. Pull all your ingredients out of your pantry and you’re halfway there already. Mix your cocoa powder, coconut oil, and honey in a bowl. Time saving tip: there’s a way to use only one 1/4 measuring cup here! Measure the cocoa powder first, then use the same cup measure for the coconut oil, and then measure the honey. The cocoa powder won’t stick and the honey will slide right out since the cup will already be oiled. Add a pinch of salt and mix, mix, mix! The first time I made this chocolate my husband had clumps of salt in his. If you want salty chocolate, sprinkle sea salt on top; this salt is not for that, it’s only to bring out the flavor.

That’s your chocolate base. If you like simple chocolate, that’s all you need, but I think it’s the add ins that make this into killer chocolate.

Here’s where you get to go crazy! The first add in I would recommend is vanilla because vanilla makes everything taste better. You can add flavor extracts like maple or almond, but I love to add essential oils to my chocolate—this is not only delicious but it takes the chocolate from not bad for you to legitimately healthy.

Young Living essential oils are the only ones I can recommend you ingest. Essential oils are so powerful and you do not want to put anything in your body that isn’t of the highest quality. Because Young Living is so transparent in their process and they actually invite people to their farms to watch them make oils, you can completely trust the quality. Peppermint and orange essential oils are my absolutely favorite! Peppermint can help reduce cravings, deal with heartburn, and it’s the only way I kept my morning sickness at bay when I was pregnant. Orange essential oil contains d-limonene and promotes healthy cellular function. This chocolate is healthy!

Once you’ve mixed all your ingredients together, pull out a chocolate mold, and if you don’t have one you can use a simple ice cube tray for individual chocolate! Another option is to pour the chocolate out into a baking tray and you can break it apart like a chocolate bar. Set the chocolate in the freezer for about an hour. Once they are set, pop them out and store them in the freeze. Make sure you keep them in the freezer or they will melt, and there you have it! Delicious, healthy, simple chocolate.

Recipe

Base ingredients:

  • 3/4 cup melted coconut oil
  • 3/4 cup cocoa powder
  • 1/4 cup honey or less to taste
  • Pinch of salt

Optional add ins:

  • 1 drop Young Living Peppermint essential oil
  • 1 drop Young Living Orange essential oil
  • Vanilla extract
  • Maple extract
  • Sea salt
  • Nuts or candies 
  • Unsweetened coconut shavings

Steps:

  1. Mix the base ingredients into a bowl.
  2. Add any of the optional add ins you want. 
  3. Pour into ice cube tray, chocolate mold, or baking tray. 
  4. Let set in the freezer for an hour. 
  5. Pop out of mold or break apart and store in plastic bag in the freezer.
